Poudre Douce literally translates to mean "sweet powder." This medieval blend is a less pungent version of its counterpart Poudre Forte, or "strong powder," since it drops the pepper from the recipe. The cinnamon and ginger still predominate, but remember that there are literally thousands of interpretations out there from original source material. Poudre Douce can be in everything from pies and cookies to meat dishes and fruit soups, so keep some in your pantry at all times.
