This tiny chile tips the hotter end of the scale, and has a searing, full mouth heat with a mild tang. Use pequin chiles anywhere a healthy dose of heat is called for- in soups, stews, salsas and bean dishes. Pequins make a nice additiion to the pickle jar, and can be used to make infused chile oil.
