Szechuan pepper is not related to black pepper, but is the dried berry from the Chinese prickly ash bush. Also known as fagara, this spice has a tingly flavor that zaps the tongue like an electrical current. Intense! Use like pepper for a tasty change of pace.

Szechuan pepper has an awesome flavor that pairs great with citrus. I made a lemon Szechuan sorbet by infusing the pepper into a simple syrup.

Added bonus: the leftover syrup can make an awesome cocktail.
