Perhaps the ultimate exotic blend, Ras el Hanout is Morocco's answer to India's complex curries and varies widely in composition. It translates from Arabic to mean "head of the shop" and it's up to the store owner to compose his blend of choice, often with more than 20 items. For ours we decided to use all the exotics like Ajwain, Grains of Paradise, Long Peppers and Nigella. It's illegal to import the Spanish Fly beetle often included in this blend but our lobbyists are working on Congress at this moment. Excellent on meats or in stews or our Ras El Hanout Plum Preserves. For something extra exotic, try this Roasted Quail Feast. This blend is salt free.
