This rub was created with poultry and fish in mind. Here we've taken a classic barbecue style rub, heavy on the paprika, black pepper and garlic powder; and lightened it with Onion powder, Lemon peel, Sage and Marjoram. The result is robust enough to season turkey legs or chicken but subtle and delicate enough not to overpower whitefish such as hake or cod. (It's really good in fried chicken, too! Just add it to your flour mixture.) We like Fin & Feather BBQ Rub on salmon with sliced pears. Also contains New Mexican chiles, Cumin, Celery seed and salt.
