Pu-erh - Tuocha
Each toucha, a firmly pressed pellet of tea, has been aged in buried bamboo baskets for five years. The result, when brewed properly, is a spectrum of flavors starting with a dark musty character to a sweet finish. The toucha, or "bird's nest" must be rinsed and broken before steeping to aid in the release of flavor.
Brew 1 to 3 minutes at 205°F; 1 to 5 steepings (for multiple steepings of Pu-Erh Toucha, use the shorter brew time).
