Mahlab (also spelled mahalab, mahleb, mahaleb, mahlep, or mahalep - whew!) is the seed kernel extracted from the St. Lucie cherry. A popular ingredient in many Mediterranean, Greek and Egyptian baked goods and pastries, mahlab adds a wonderfully unique hint of cherry and bitter almond flavor.
