This thickening agent has more power than flour or even cornstarch. Plus, arrowroot has the unique characteristic of adding a glossy sheen to sauces, much like finishing with butter but without the fat. Arrowroot does not combine well with dairy products in warm sauces but makes an excellent thickener for Asian style stir-frys and sauces.
