Ajwain has an intense flavor that hints at both cumin and thyme, with a subtle musty base. Most commonly found in Indian and African cuisine, it can be used in place of cumin for a surprisingly different flavor. But use a light hand! The bold flavors of ajwain can easily overpower a dish.
