Rooibos

The Dutch who settled South Africa went looking to the bush for a tea substitute and came back with this shrub whose name in Africans literally means "Red Bush". Brew Rooibos, as with most herbals, with full boiling water for 6 minutes to yield a beverage with subtle smokiness that's surprisingly like leaf tea.
