

Camellia sinensis

This authentic white tea is hand-picked for only
a few days in the Spring--just one bud and two leaves, to obtain the most
tender growth. After only minimal processing, the leaves have mottled
colors which give it the White Peony name. This white tea gives a light
aroma of tea growing on the hillside, subtle toast from the dying fires
and every bit of green leaf freshness. To get more of the character of
China in your cup, you'd have to be standing in the gardens themselves.
Brew 1 minutes at 190°F; 2 to 6 steepings.
