

Camellia sinensis

These tiny pellets of tea are similar in color and
shape to the black powder of the 17th century, and hence the name came
into common use. Premium production gets the "pinhead" designation because
of very tightly rolled, finely formed leaf. Despite the name, this is
a delicate brew with classic Chinese green earth tones.
Brew 1.5 to 2 minutes (or until leaf opens) at 190° F; 2 steepings.
