Cinnamomum verum
True cinnamon is a unique variety with mild and complex flavor and only hints of the cassia-cinnamon to which we are more accustomed. Don't jump to the conclusion that "true" means better or stronger, it is mainly a botanical distinction. Use true cinnamon for a twist in curries and stews. We like to use it in combination with cassia for heavenly flavors in baked goods. Grind only what you need for each use because it loses flavor quickly.
