Citric acid
Powdered lemon juice is bulked up by citric acid in this crystal which dissolves nicely and adds the true taste of lemon. Include a small amount in spice blends as an overall flavor enhancer or a little more for lemon flavor. Because it's incredibly tart, we use small amounts in our lemon pepper blends to hold up to the strong flavors of fresh cracked peppercorn.
