

Sinapsis alba

A cousin of the yellow seed, this is commonly substituted for the black version in Indian cuisine. A must for the base of curries, it is often "popped" in hot oil for southern Indian dishes. These seeds also make an interesting condiment when softened in wine and spread on meats or cheese.
