

Lavandula offincinalis

Seen all over France as a savory ingredient, Herbs de Provence takes it's base cue from these purple-blue flowers. We like the way lavender bulks up the bottom note in teas and because of the intensity, it holds up well in rubs for game and even takes the "fishy" edge off seafood. It combines well with lemons into lemonade and baked goods like lemon-poppy scones and shortbread.
