

Sassafras albidum

File powder (pronounced Fee-lay) is simply powdered sassafras leaves and has been used as a flavoring agent and thickener in the southern U.S. for years. Influenced by Cajun and Creole traditions, file was cheap and available to the peasants that formed the themes of the cuisine. Be careful not to cook too long or at too high a heat...you'll get a gloppy mess. Dust it on soups and stews prior to serving to be certain that the consistency is just perfect.
