

Foeniculum vulgare

A sweet taste similar to licorice comes out with this small green seed. Seen in Indian curries and Chinese spice blends, this seed can be crushed and sautéed with bold vegetables for a wonderful complexity of flavor. Also seen in Italian sausage blends, fennel is perfectly at home in a marinara sauce as well.
