

Apium graveolens

A bittering agent that can be seen in heavier beef dishes in Europe, it is also found as part of the classic Cajun quad of bay, mustard, and cayenne. Use it sparingly in rubs and gumbos or try it hearty soups where a rich, low end flavor is needed.
