This favorite has the irresistible combination of comfort and authenticity.

Serves 4

3 pounds beef brisket

3 tablespoons Memphis Beale St. BBQ Rub

Whiskey BBQ Sauce:

1 clove garlic, minced

1 tablespoon olive oil

1/2 cup whiskey

1/2 cup orange juice

1 tablespoon ginger powder

1 tablespoon Worcestershire Sauce
(or 1/2 teaspoon Worcestershire Powder)

1 tablespoon sugar, or molasses

1 tablespoon tamari, or soy sauce

6 oz. tomato paste

Preheat oven to 300 degrees.
Place brisket in cast iron skillet and rub evenly with Memphis Beale St. BBQ spice blend.
Place olive oil in sauce pan and place over low heat.
Add garlic and cook until softened.
Add remaining sauce ingredients, stirring until blended.
Pour sauce over brisket.
Cover and bake 3 hours, or until fork-tender.

Serve with green beans, collard greens and corn bread. Sigh.
