HEY! Chile customers! Please remember that for whole chiles, WE DO NOT GRIND them like we do our other spices to preserve flavor. They're best ground in a small electric coffee mill, sometimes after a light toasting in a dry pan, to preserve the most intensity and character. 

SOME of the chiles come to us in a different form (e.g. flake, ground, etc) and those are noted. YOU'LL ONLY GET CHILES IN THE FORM PICTURED ON THE WEBSITE, no matter what you ask for. We mean it. Seriously. No, no exceptions. Not even if you ask Kay extra nice. No. It's too much labor and you lose flavor. Got it? OK. Now go make dinner already.
