There are hundreds of varieties of Zahtar, and one common flavor profile is the combination of sesame seeds and sumac. This blend comes to us from the city of Aleppo in Syria where there are entire shops selling nothing but different blends of Zahtar. Here the herbaceous character of the Israeli Zahtar is replaced by the deep flavor of toasted cumin and coriander with just a hint of anise. An excellent all-purpose condiment blend, Syrian Zahtar is particularly tasty sprinkled liberally on lamb, both before and after grilling.
